Colleen’s coffee scented date nut bread

1 cup chopped pitted dates

1 cup strong coffee (brewed)

1 teaspoon baking soda

2 Tablespoons soft butter

1 cup white sugar

1 egg

1 teaspoon vanilla

1 1/2 cups all purpose flour

1 teaspoon salt

1 cup chopped pecans

Preheat oven to 350 degrees

Grease a bread loaf pan (8 x 4)

Chop the dates, place in a small mixing bowl and add coffee. Let sit while combing dry and we ingredients.

In a medium mixing bowl, mix soft butter, white sugar, egg, and vanilla until well blended.

In a small mixing bowl add flour, salt, and baking powder. Add to the butter-sugar mix in two or three batches.

Add pecans and dates and stir until incorporated.

Pour into loaf pan.

Bake for 50 to 60 minutes. Let cool 10 minutes and remove from pan and cool thoroughly.

Eat as is or toast and add butter before eating.
